Grilled Marinated Veggies

These succulent grilled veggies will be a winner at your BBQ!

Serves 4 people

Ingredients

  • 2 Peppers
  • 2 Shallots
  • 1 Aubergine
  • 1 Courgette
  • Fresh basil
  • Fresh parsley

For the marinade

  • 200ml of olive oil
  • 2 pressed cloves of garlic
  • 1 lemon
  • A frew sprigs of thyme
  • Salt & pepper

Preparation

Step 1

Cut the aubergine, courgette and peppers lengthwise into thick slices and finely chop the shallots. Place the vegetable slices into a large bowl and season with salt. Set aside and allow the salt to draw excess moisture out of the vegetables.

Step 2

Combine all the ingredients to make the marinade. Season to taste with salt and pepper. Cut the lemon in half and squeeze some juice into the marinade to taste.

Step 3

Brush the marinade onto the vegetables. Add the vegetables to a hot grill. Continue brushing them with the marinade from time to time.

Step 4

When the grilled vegetables are tender, they are ready to serve. Garnish with the fresh herbs.
